Egg Bhurjee recipe

The popular egg bhurjee is a simple recipe to make and relish with ease. It uses the most simple ingredients. It is versatile and can be had by itself, or as a side with rice and curry, or as a wrap with chapathis or as a sandwich with bread.

Ingredients:

  • 4 Eggs
  • 2 Onions
  • 1 tsp Urad Dal
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin seeds (jeera)
  • 1/4 tsp turmeric powder
  • 2 Green chillies
  • Few coriander leaves
  • 4 tsp Oil to fry

Preperation method:

  • Chop the onions and Green chillies finely. Keep them a side.
  • Heat a non-stick pan on medium heat and add the oil.
  • Then add scumin seeds and coriander leaves
  • Add the chopped onion followed by chopped green chillie. Fry to light golden brown.
  • Add in the red chilli powder, turmeric powder, salt and mix well.
  • Break the eggs and pour into the pan directly.
  • Mix all the beaten eggs well with onion mixture.
  • Remove from heat and serve hot with rice or roti.
