Lemon Rice (or Chitrannam) is commonly made for breakfast or lunch in the South India. The lemon rice which is served in every auspicious functions, festivals and as prasad at temples. A variation which includes mangoes, Chaitranna is also made during summer.
Ingredients
- 2 cups boiled rice
- 1 big lemon (squeeze the juice and kept it aside)
- 6 tsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- 1/2 tsp chana dal
- 1/4th cup groundnuts
- 1/4th cup cashew nuts
- 1/2 tsp turmeric powder
- 2-3 dried chillies
- A pinch of asafoetida
- Salt to taste
- Few curry leaves
Method of preperation
- Heat oil in a kadai.
- Add mustard seeds,groundnuts,cashew nuts,urad dal,chana dal. Saute for 2 minutes.
- Let mustard seeds crackle,then add asafoetida,turmeric,dried chillies and curry leaves.Stir fry half a minute.
- To this, add boiled rice,lemon juice and salt, mix well.
- Chitrannam is ready to serve with raita or coconut chutney.
It looks good, I love the bright yellow color. Lemon rice with some mangoes sounds delicious.
