Ingredients:
- 5 Carrots
- 1 Onions
- 1 dry Coconut
- 1 tsp of Chana dal
- 1 tsp Urad dal
- 1 tsp Mustard seeds
- 1/2 tsp of Jeera
- 1/2 tsp Turmeric
- 2 Red chilly pieces
- Few Curry leaves
- 3 tsp Oil
- Salt
How to make Carrot fry:
- Wash the carrots and grate them. Keep it aside.
- Chop the onion and keep it aside.
- Take a pan, heat oil and add curry leaves, chana dal, urad dal, jeera, mustard seeds, and red chilies.
- As the mustard seeds starts to splutter, add onion and fry until it turns light brown.
- Now add carrot and fry for few minutes.
- Add turmeric and salt and fry for 10 minutes more.
- When carrots are cooked, add the grated dry coconut to it and fry for 5 minutes.
- Now Carrot fry is ready to eat. Serve with rice.
