Andhra delicious: Madatha kaja

Ingredients:


  • 1 cup All purpose (Maida) flour
  • 2 tsp Rice flour
  • 5 tsp Ghee
  • 1 1/2 cup Sugar
  • 1 cup Water
  • A pinch of Baking soda
  • Oil for deep frying

Procedure:


  • Mix All purpose flour with ghee,baking soda and water and make a soft dough.
  • Keep aside for fifteen minutes.
  • Now, divide dough into lime sized small balls. Keep aside.
  • Roll out each lime sized dough ball, like chapathi.
  • Now place 2 chepathis one on each other. In between those two, put little ghee and rice flour and roll them.
  • Now cut this rolled chapati into 5 to 6 peices.
  • Take each piece and stretch it with pressed with hands (or use appadala karra) on the top to flatten.
  • Repeat the rest of the dough balls.
  • Meanwhile, heat sugar with 1 cup of water, until sugar dissolves and syrup looks thick.
  • To test whether the syrup is ready, take a drop between your fingers. It should feel sticky and stretch a little.
  • Then remove syrup from heat.
  • Heat the oil in a thick bottomed pan, on medium heat, until it is hot.
  • Drop the prepared khajas and fry over low heat until they turn golden yellow.
  • Remove and immediately drop them into prepared sugar syrup.
  • Let them soak for 30 minutes and then remove from the syrup.
  • That's it your home made delicious Madatha kaja's are ready.
  • Decorate with slivered almonds and serve.
  • You can store them in the container, they can be stored for 15 days.
