Ingredients:

  • 2 cups Rice flour
  • 2 cups Besan / Senagapindi
  • 1 tsp Ajwain / Vamu
  • 3 tsp Butter
  • 1 tsp Red chilli powder (option)
  • Salt to taste
  • Oil for deep frying
  • Water to make a hard dough

Method of preparation:

  1. Mix all together rice flour, besan flour, salt, butter, chilli powder, vamu and combine well.
  2. Slowly add water little by little to make a soft dough, just soft enough that it is pressed through easily with the muruku mould (or janthikalu maker or chatram).
  3. Heat a wide heavy bottomed vessel with enough oil for deep frying.
  4. To test the hotness of the oil, drop a little amount dough in the oil. When the dough immediately comes up, then the oil is hot enough to start making the karapusa now reduce the stove to medium flame.
  5. Place a portion of the dough in a muruku mould and pressing the mould in a circular fashion in the oil so that you cover the oil fully in the pan.
  6. The dough comes outas thin strands (like noodles) which are directly dropped into hot oil.
  7. When it turns golden in color on both the sides and the bubbles in the oil subsides, remove from oil and allow it to drain on a paper towel. Don't over fry otherwise colour turns to brown.
  8. Repeat the same process with the rest of the dough.
  9. Cool completely before storing in an air tight container.
