Karapusa (also known as Omapodi or Omapusa or Sev) is simple and easy to make .Here is the recipe..
Ingredients:
- 2 cups Rice flour
- 2 cups Besan / Senagapindi
- 1 tsp Ajwain / Vamu
- 3 tsp Butter
- 1 tsp Red chilli powder (option)
- Salt to taste
- Oil for deep frying
- Water to make a hard dough
Method of preparation:
- Mix all together rice flour, besan flour, salt, butter, chilli powder, vamu and combine well.
- Slowly add water little by little to make a soft dough, just soft enough that it is pressed through easily with the muruku mould (or janthikalu maker or chatram).
- Heat a wide heavy bottomed vessel with enough oil for deep frying.
- To test the hotness of the oil, drop a little amount dough in the oil. When the dough immediately comes up, then the oil is hot enough to start making the karapusa now reduce the stove to medium flame.
- Place a portion of the dough in a muruku mould and pressing the mould in a circular fashion in the oil so that you cover the oil fully in the pan.
- The dough comes outas thin strands (like noodles) which are directly dropped into hot oil.
- When it turns golden in color on both the sides and the bubbles in the oil subsides, remove from oil and allow it to drain on a paper towel. Don't over fry otherwise colour turns to brown.
- Repeat the same process with the rest of the dough.
- Cool completely before storing in an air tight container.
