Delicious and nutritious recipe of Carrot Pepper rice
Ingredients:
- 1 cup Basmati rice
- 1 cup Grated carrot
- 1 Onion
- 2 Green chilies
- 1 tsp Urad daal
- 1 tsp Mustard seeds
- 2 tsp Pepper powder
- Ghee or Oil for cooking
- Few Cashew nuts
- Few Curry leaves
- Salt to taste
Preparation Method:
- Wash and cook the rice separately with 2 cups of water. Spread in on a tray and let it cool.
- Heat ghee or oil in pan, add the cumin seeds.
- When the cashew nuts are brown, add chopped onion and green chilies.
- Fry till the onions are golden.
- Add cashew nuts fry it for a minute.
- Add grated carrot, curry leaves and salt
- Once the carrot is done add Pepper.
- Finally add the cooked rice and lemon juice mix it gently and serve with Raita.
