Palak Rice (Spanish Rice) recipe


  • 1 Small Bunch of Palak or Spinach
  • 1 finely chopped Onion
  • 1 finely chopped Tomato
  • 1 Cup Basmati  Rice
  • 2 tsp Ginger-garlic paste
  • 2 Green chillies
  • Salt to taste
  • 1 tblsp garam masala powder
For Seasoning
  • 1 tsp Ghee
  • 1 tsp mustard seeds
  • 1 tsp urad dal and chana dal
  • 1 tsp Jeera
  • Curry leaves
  • 1 Cinnamon
  • 1 Clove
  • 2 Bay leaves
  • Handful of Cashews

Method of Prepartion:

  • Boil palak with green chillies and make puree of it.
  • Heat Oil in a kadai. Add bay leaves, cloves,cashews, mustard seeds, jeera, urad dal and chana dal one by one to it.
  • When just fried add slit green chillies, chopped onion, chopped tomatoes and ginger-garlic paste.Saute for a minute.
  • Add palak puree and cook till oil separates. Add salt as required. 
  • Now add 1 cup rice,2 Cups of water to it and close the lid .Cook until the rice is soft.
  • Remove from fire.Palak rice is ready to serve with raita or pickle.
  • 1 tsp ghee added gives a good taste to the Palak Rice.
