Andhra style Sorakaya Bajji/Bottle Guard Curry recipe

INGREDIENTS:

  • 1 medium sized Bottle gourd (Sorakaya)
  • 3 Green chilies
  • 1 Onion
  • 3 tablespoon Tamarind pulp
  • ¼ tablespoon Turmeric
  • Salt to taste
  • 4 tablespoon Oil
  • ½ tablespoon Mustard seeds
  • ½ tablespoon Cumin seeds
  • Few Curry leaves,

METHOD OF PREPARATION:

  1. Wash and peel bottle gourd. Cut the Bottle gaurd (sorakaya) to small piece (an inch size). Also chop the onion and cut the chillies length wise.
  2. In a deep pan cook bottle gourd pieces (sorakaya mukkalu), green chilies, turmeric in to 1 cup of water until soft.
  3. Once fully cooked add salt, tamarind and again it for 5 minutes.
  4. Now remove it from the heat and mash it a little with ladle or serving spoon (don’t make it into fine paste) and keep it aside.
  5. In another pan heat oil, add mustard seeds, curry leaves, and onions and let them fry till onions get golden brown color.
  6. Now add this seasoning to the mashed sorakaya curry and mix well.
  7. Cook it for another 3 minutes on medium heat.
  8. Serve with rice.
