Indian Broad Beans (Pandiri Chikkudu) fry - recipe


INGREDIENTS:

  • 500 grams Indian Broad Beans (Pandiri Chikkudu)
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dal
  • 2 dry Red Chillies
  • 3 teaspoon Oil
  • 4 Garlic flakes
  • Few Curry Leaves
  • Salt to taste

PREPARATION:

  1. Cut the beans into half inch length with your fingers. You don’t need a knife for this.
  2. Cook these beans about a cup of water, add a pinch of salt in a cooking pan . This should take about 5 to10 minutes. Take care that beans cooks very fast and be careful not to over cook it.
  3. Drain the water and set aside.
  4. Heat oil in a separate pan.
  5. When oil is hot add urad dal, mustard seeds, cumin seeds and fry till the seeds splutter. Now add red chilies, lengthy sliced garlic flakes, and curry leaves.
  6. Add boiled beans and mix well. If there is any water, cook on high until water evaporates. Reduce the flame to medium flame and fry for another 5-10 minutes.
  7. Adjust salt and when the beans are completely cooked, turn off heat
  8. Now serve it with hot rice.
