Indian Broad Beans (Pandiri Chikkudu) fry - recipe
 
INGREDIENTS:
- 500 grams Indian Broad Beans (Pandiri Chikkudu)
 
- 1 teaspoon Cumin Seeds
 
- 1 teaspoon Mustard Seeds
 
- 1 teaspoon Urad Dal
 
- 2 dry Red Chillies
 
- 3 teaspoon Oil
 
- 4 Garlic flakes
 
- Few Curry Leaves
 
- Salt to taste
 
PREPARATION:
- Cut the beans into half inch length with your fingers.  You don’t need a knife for this.
 
- Cook these beans about a cup of water, add  a pinch of  salt in a cooking pan . This should take about 5 to10 minutes. Take care that beans cooks very fast and be careful not to over cook it.
 
- Drain the water and set aside.
 
- Heat oil in a separate pan.
 
- When oil is hot add urad dal, mustard seeds, cumin seeds and fry till the seeds splutter. Now add red chilies, lengthy sliced garlic flakes, and curry leaves.
 
- Add boiled beans and mix well. If there is any water, cook on high until water evaporates. Reduce the flame to medium flame and fry for another 5-10 minutes.
 
- Adjust salt and when the beans are completely cooked, turn off heat
