Upma is undoubtedly the easiest dish to cook! Upma is a common breakfast item in India. Upma has its origin in South India. It is a very nourishing and simple to prepare dish, which can be eaten at any time of the day for snacking.
Ingredients:
- 1 cup Rava / Sooji
- 1 tsp Urad Daal
- 1 tsp Channa Daal
- 25 gms fried Cashew Nuts (optional)
- 1/2 tsp Ginger (chopped)
- 1 chopped Onion
- 2-3 Green Chillies slit sideways
- 1 tsp Mustard Seeds
- Salt to taste
- 2 tsp Oil
- Few curry leaves
- 1 tsp Ghee / Clarified butter
- 2-3 cups Water
Preparation:
- Place a pan on the stove and fry rava till it is evenly heated. Do not allow the rava to become brown. Keep the fried rava aside.
- Then a saute pan and heat oil and ghee in it.
- Add mustard seeds, urad dal, channa dal and fry till they turn golden brown. Be careful here as the mustard seeds start to splutter as soon as they are dropped in oil.
- To this, add chopped green chillies and ginger and fry for another minute.
- Now, add chopped onions and fry it till the onions start turning transperent.
- After everything has been cooked, add some water and salt and let the mixture boil for 5 more minutes (approx.).
- Now add the fried Rava to it stirring constantly till it becomes little thick. Also make sure that no lumps are formed during the stirring process.
- Cover the vessel with a lid for about 6-8 minutes or till it is fully cooked.
- Next, reduce the flame and add the chopped coriander leaves and some curry leaves and mix it a little (and lemon juice if desired).
- Turn off the flame and transfer the contents into a hot case.
- Serve hot with chutney or sambar or sugar.
