Capsicum Masala rice

INGREDIENTS:

  • 1 cup boiled rice
  • 1 Big capsicum or Green bell pepper thinly sliced. 
  • Salt to taste
  • 1 tbs ghee

For Masala powder

  • 1/2 tsp Coriander seeds
  • 2 Dried Red Chilies
  • 1 small Cinnamon stick
  • 1 tsp Jeera
  • 1 tsp Mustard seeds
  • 1 tsp Urad dal
  • 1 tsp Chana dal
  • 1/2 tsp Pepper
  • 1 tbs Dry coconut

For Seasoning

  • 1/2 tsp Mustard Seeds
  • 1 tsp Urad dal
  • Curry Leaves
  • Coriander Leaves for Garnishing
  • Few Cashew nuts


METHOD OF PREPARATION:

  • Roast the masala ingredients in a little ghee and grind them into powder .Keep aside.
  • Heat oil and add seasonigs one by one and fry till golden brown in color. 
  • Add the sliced capsicums and fry them for few minutes.  
  • Now add prepared masala powder and salt needed. Do not overcook as the capsicums should be crunchy.
  • Add the cooked rice and mix well.Fry for a few minutes until the rice is hot. 
  • Garnish with coriander leaves and serve hot with raita.
