Diamond Biscuit / Shankarpala Recipe
Ingredients:
- 2 cups All purpose (Maida) flour
- 1 1/2 cups Sugar
- 1 tsp Salt
- A pinch Baking soda
- 1 tsp Ghee
- 1/4 cup water (or as needed)
Preparation Method:
- Take Sugar in the mixer, blend until it turns to powder and keep it aside.
- Take a pan, add ghee and roast the all purpose flour untill we have a nice aroma.
- Mix the roasted maida flour, powdered sugar, salt, baking soda and water and make a soft dough.
- Keep aside for 45 - 60 minutes.
- Now, divide dough into lime sized small balls. Keep aside.
- Using a rolling pin roll it into thin rotis. Leave the rotis to dry for 10 mins.
- Cut the rotis into diamonds shape.
- Repeat the same for the remaining dough.
- Heat the oil in a frying pan, once it has become very hot, reduce to low flame.
- Now put the biscuits in the oil and deep fry. Wait till it turns to golden brown color.
- Remove from heat and drain the biscuits in a strainer and store it in a dry air tight container.
