Diamond Biscuit / Shankarpala Recipe

Ingredients:

  • 2 cups All purpose (Maida) flour
  • 1 1/2 cups Sugar
  • 1 tsp Salt
  • A pinch Baking soda
  • 1 tsp Ghee
  • 1/4 cup water (or as needed)

Preparation Method:

  • Take Sugar in the mixer, blend until it turns to powder and keep it aside.
  • Take a pan, add ghee and roast the all purpose flour untill we have a nice aroma.
  • Mix the roasted maida flour, powdered sugar, salt, baking soda and water and make a soft dough.
  • Keep aside for 45 - 60 minutes.
  • Now, divide dough into lime sized small balls. Keep aside.
  • Using a rolling pin roll it into thin rotis. Leave the rotis to dry for 10 mins.
  • Cut the rotis into diamonds shape.
  • Repeat the same for the remaining dough.
  • Heat the oil in a frying pan, once it has become very hot, reduce to low flame.
  • Now put the biscuits in the oil and deep fry. Wait till it turns to golden brown color.
  • Remove from heat and drain the biscuits in a strainer and store it in a dry air tight container.
