Bharwan Baingan recipe

INGREDIENTS:

  • 5 Small brinjals or baingans
  • 1 big chopped onion
  • 1 tsp Ginger-garlic paste
  • 1/2 tsp cumin seeds
  • 1/2 tsp red chilli powder
  • 1 tsp garam masala powder
  • 1 1/2 tsp tamarind paste
  • Salt to taste
  • 3 tsp oil
FOR STUFFING(MIX TOGETHER):
  • 2 tsp dhania powder
  • 2 tsp sesame seeds
  • 2 tbsp roasted peanuts-crushed roughly
  • 1/2 tsp turmeric powder
  • 1/2 tsp amchoor powder
  • 1/2 tsp sugar
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • Salt to taste


METHOD:

  • Wash and slit brinjals into four halves,don't remove the stems.Soak in salt water for 5 minutes,removes any bitterness from brinjals.
  • Mix all the ingredients of the stuffing nicely.
  • Stuff the brinjals with this masala.
  • Heat oil in a heavy bottomed pan, add cumin seeds,chopped onion,ginger garlic paste.Mix well and allow to cook for 2 minutes.
  • Now add stuffed brinjals,salt.Sprinkle little water,covered and cook on low flame.
  • Add tamarind paste,sugar,garam masala powder,red chilli powder and excess masala of stuffing.Mix gently for the masala to coat.Cook for another 2 minutes.
  • Remove from flame and garnish with coriander leaves.Serve hot.
