INGREDIENTS:
- 5 Small brinjals or baingans
- 1 big chopped onion
- 1 tsp Ginger-garlic paste
- 1/2 tsp cumin seeds
- 1/2 tsp red chilli powder
- 1 tsp garam masala powder
- 1 1/2 tsp tamarind paste
- Salt to taste
- 3 tsp oil
FOR STUFFING(MIX TOGETHER):
- 2 tsp dhania powder
- 2 tsp sesame seeds
- 2 tbsp roasted peanuts-crushed roughly
- 1/2 tsp turmeric powder
- 1/2 tsp amchoor powder
- 1/2 tsp sugar
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala powder
- Salt to taste
METHOD:
- Wash and slit brinjals into four halves,don't remove the stems.Soak in salt water for 5 minutes,removes any bitterness from brinjals.
- Mix all the ingredients of the stuffing nicely.
- Stuff the brinjals with this masala.
- Heat oil in a heavy bottomed pan, add cumin seeds,chopped onion,ginger garlic paste.Mix well and allow to cook for 2 minutes.
- Now add stuffed brinjals,salt.Sprinkle little water,covered and cook on low flame.
- Add tamarind paste,sugar,garam masala powder,red chilli powder and excess masala of stuffing.Mix gently for the masala to coat.Cook for another 2 minutes.
- Remove from flame and garnish with coriander leaves.Serve hot.
